Italian Pepper Sausage recipe
Ingredients:
4 ½ lb of course ground pork.
1 ½ lb of salt pork.
1 clove garlic.
1 onion, quartered.
1 ½ tablespoon of freshly ground black pepper.
2 tablespoons of salt.
4 tablespoons of paprika.
4 teaspoons of fennel.
2 tablespoons of crushed red pepper, dried.
¼ teaspoon of thyme.
½ teaspoon of bay leaf, crushed.
½ teaspoon of coriander.
1 cup of red wine.
Directions:
Combine all of the ingredients and mix well.
Stuff into hog casing.
Pan fry until brown on all sides and well done.
