Fresh Garlic Sausage recipe

Ingredients:

5 feet medium hog casings.
3 ½ lb of lean pork butt, cubed.
½ lb of pork fat, cubed.
2 teaspoons of sugar.
4 teaspoons of garlic, finely minced.
1 tablespoon of black pepper.
1 tablespoon of salt.
¼ tablespoon of nutmeg, freshly grated.
14 teaspoons of cinnamon, freshly grated.
1 tablespoon of ginger, finely chopped.
¼ tablespoon of ground allspice.
¼ tablespoon of ground thyme.
½ cup of dry white wine.

Directions:

Prepare the casings.

Grind the meat and fat together through the fine disk and mix with the remaining ingredients.

Stuff and twist into four-inch links.

Dry, uncovered, in the refrigerator for a day or two, turning them often.

Cook by boiling in water or chicken stock or freeze.
