Farm Sausages recipe
Ingredients:
2 lb of lean ground pork, at room temperature.
1/3 cup of onion, finely chopped.
2 teaspoons of fresh parsley, finely minced.
1 teaspoon of rubbed sage.
1 teaspoon of dried basil.
1 teaspoon of dried marjoram.
1 teaspoon of chili powder.
1 teaspoon of black pepper.
½ teaspoon of ground red pepper.
¼ teaspoon of dried thyme.
Directions:
In a deep bowl, combine all of the ingredients, using hands if needed.
On wax paper, shape and roll the mixture into two logs 6-inches long and 2-inches in diameter.
Wrap in plastic wrap or foil and refrigerate overnight.
To serve, slice the rolls into rounds about ½-inch thick and fry in a heavy skillet over medium-low heat for about 3-4 minutes on each side or until done.
Drain on paper towels.
Serve immediately.
