Country Sausage recipe
Ingredients:
5 lbs of pork butt.
2 ½ teaspoon of black pepper.
3 tablespoons of sage, ground or rubbed.
½ teaspoon of thyme.
½ teaspoon of coriander.
1 tablespoon of kosher salt.
1 tablespoon of sugar.
1 cup of cold water.
1/8 teaspoons of cayenne.
Directions:
Grind the pork butt.
Mix the spices, salt and sugar into the cold water and then add the water to the ground pork. Mix thoroughly.
Follow standard sausage making procedures.
